Cha Cha's White Chicken Chili
- 1 Tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 oz can diced jalapenos
- 4 oz can diced green chili peppers
- 2 tsp ground cumin
- 2 tsp ground cayenne pepper
- 1 tsp dried oregano
- 2 (14 oz) cans chicken broth
- 3 cups chopped chicken breast
- 3 (15 oz) cans white beans
- 1 cup shredded Monterey Jack cheese
- Heat oil in large saucepan. Add onion, cook until tender. Add garlic, jalapeno peppers, chili peppers, and spices. Cook about 3 minutes. Add broth, chicken, and beans. Simmer 15 minutes.
- Remove soup from head. Add cheese. Stir until melted.
